Mexican Style Ice Cream

Your friends and family will go loco for Chapman’s Mexican Ice Cream Sundaes! A few simple steps are all you need to take a scoop of our original Vanilla Ice Cream from great to incredible. Ingredients

  • Chapman’s Markdale Creamery Vanilla Ice Cream (6 scoops)
  • 6 flour tortillas
  • ½ cup canola oil
  • 2 Tbsp white sugar
  • ½ tsp cinnamon
  • ¼ cup cornflakes, crushed
  • Chocolate syrup, to drizzle
  • Sliced strawberries & bananas
  • Whipped cream (canned is fine)

To make the cinnamon-sugar tortilla crisps: Cut tortillas into 8 even triangles. Fry tortilla triangles in hot canola oil until golden.

Combine sugar and cinnamon on a plate. Using tongs, dip fried tortilla chips in cinnamon-sugar to coat, then set aside.

Save remaining cinnamon-sugar for the next step.

To make the ice cream: Add crushed cornflakes to the plate of cinnamon-sugar and mix.

Take a scoop of Chapman’s Original Vanilla Ice Cream and gently roll in cornflake crumb mixture until coated.

Freeze until ready to serve.

To serve: Drizzle each serving dish with chocolate syrup. Top with 3 or 4 prepared tortilla triangles.

Add chopped strawberries and bananas. Top with a generous dollop of whipped cream.

Top with coated ice cream scoop. Finish with a squirt of whipped cream and add a strawberry on top.
