Line a loaf pan with parchment paper.
Combine chia seeds, medjool dates, dried figs, nuts, water and cinnamon in the bowl of a food processor and pulse until ingredients begin to come together and form a chunky paste.
Press the nut and dried fruit mixture into the bottom of the prepared loaf pan.
Cut open the side of the rectangular package of Chapman’s Strawberry Ice Cream and cut out a 1 or ½ inch slice that will cover the length and width of the loaf pan. You may need to cut an extra piece or two depending on the size of your pan. Cover the nut mixture entirely with the slices of Strawberry Ice Cream and top with sliced figs.
Place in the freezer for 1 hour or more, slice and enjoy.
