Macadamia Surprise Ice Cream Cake


  • 1 box Chapman's Ice Cream Sandwiches
  • 2 Litre container of Chapman's Premium Ice Cream (any flavour)
  • 150 grams Chocolate Covered Macadamia Nuts
  • 8 oz Raspberry Jam
  • 1 can Spray Whipping Cream Chocolate Flavour


Select any type of container you want for the cake. A cardboard bakery box works great if you want to display the cake or present it as a gift. You could also line a cake pan with waxed paper or plastic wrap because these products remove easily from frozen ice cream. Otherwise any cake pan of any size will work if you only plan to cut slices and serve.

Chop the chocolate covered macadamia nuts and make a slurry with the raspberry jam. The nuts can be chopped finely or coarsely depending on your preference. Line your cake container with the Chapman's ice cream sandwiches. Run the 2 litre container of ice cream brefly under warm water so the ice cream will slide out easily. Slide the ice cream out and cut the ice cream in half and put one half in the freezer. Take the other half and cut in slices of even size. Arrange these slices over the ice cream sandwiches and fit to the sides of your container. Spread the macadamia nut and raspberry jam slurry over this ice cream. Retreive the remaining half of the ice cream from the freezer and cut in slices of even size. Arrange these over the macadamia nut and raspberry jam slurry. Press down tightly with a spatula and smooth to remove the lines from the slices. Using the Chocolate whipping cream decorate the top of the cake. Freeze. If you want to make a larger cake double the ingredients.
